It is no secret that cupcakes are positively buzzing with popularity right now. Television show's such as TLC's 'DC Cupcakes' and Food Network's 'Cupcake Wars' have helped catapult this tasty cake morsel into culinary superstardom.
I must admit I am a fan of the craze, cupcakes are delightful to look at and divine to eat, but they can also be a budget buster. With gourmet cupcakes coming in at $2-$4 a piece splurging on these little guys is not something I do often.
Fortunately I was clued in to a couple baking secrets that, when used, can turn an ordinary box of cake mix into some fairly extraordinary cupcakes.
Recently I organized an event for 45 women at which refreshments were served. As organizer, part of my job was to help with the desserts. Instead of going broke at a local bakery I decided to employ these special steps and make the cupcakes myself.
The results were a moist and delicious treat that saved me loads of time compared with making them by scratch and loads of money compared to buying them.
Here are my secrets below, use them for your next gathering and wow your guests. And don't worry, if you mess-up there is always The Cake Mamas close by! Their cupcakes truly are gourmet.
What you need:
One box-cake mix of your favorite flavor.
One 3.9 ounce box of instant pudding powder.
I like to match flavors so chocolate with chocolate or vanilla with vanilla. For a twist try mixing banana pudding with vanilla or white cake.
Follow instructions on the box and make the following changes:
- Add in the pudding powder (DO NOT make the pudding).
- Add one extra egg.
- Bake according to the instructions being careful not to overfill the cupcake cups.
- Decorate as desired.
